Last night was scotch eggs (hard boiled egg wrapped in sausage, dipped and breaded, then deep fried

I may be a little biased but they were good.

A pound of your favorite sausage, a poundish of potatoes O'Brian and 10 eggs. Feeds about 5 people may have a small amount left overs depending on how those people eat.

Not nearly as cool as some of the cooking stuff in here but it was time to make some lifestyle changes. Trying my best at least Monday-Friday to limit my red meat, processed food, and sugar intake. Haven’t disappointed with any of my meals yet

todays lunch was last nights leftovers, chicken fajitas with homemade Café Rio copycat tomatillo ranch sauce which I screwed up and grabbed parsley instead of cilantro lol, it was still delicious and i was told not to lose that recipe.

not a very photogenic meal lol but the other day i made some chipotle mayo and its really good on burgers and sandwiches. So i decided to try egg salad sandwich with it mixed in, you get a nice smokey flavor, spice, a little heat, all in all a good sandwich.

Yesterday was our local States day parade, family came up and i smoked a pork butt, we also had mac n cheese, red-white-and blue salad, devilled eggs and chipotle devilled eggs. The roast smoked while we went to the parade and came back home and worked on the wifes families 1934 john deere.

That's some good looking samich material right there. Touch of Escobar's BBQ sauce and I'd be in Heaven right now.

ya ive had people look at the pictures of the shredded pork before and complain cause its not smothered in sauce and they say its dry. It may look dry but far from it, also this way people can put as much or little sauce they want on their sammiches.
